67 grams of protein in this quick and delicious breakfast.
Enjoy this super healthy breakfast of scrambled eggs, vanilla oats with peanut butter and blueberries, and a protein shake, all prepared in under 15 minutes.
Ingredients:
5 Eggs.
50g Spinach.
Cherry tomatoes.
Olive oil.
Salt and pepper.
Oats.
Vanilla essence.
Blueberries.
Peanut butter.
Skimmed/semi-skimmed milk.
Protein shake.
- Heat a dash of olive oil in a frying pan. Halve the tomatoes and, once the pan is hot, place face down so that they sizzle. Season with salt and pepper and cook for around 3 minutes so that they char a little.
- Whilst the tomatoes cook, add two eggs and three egg whites to a measuring jug. Season with a sprinkle of pepper (no salt) and beat until thoroughly scrambled.
- Flip the tomatoes onto their backs and add the spinach. Cook until the spinach wilts (around 3 minutes) and mix with the tomatoes. Turn the heat down a little.
- Put the oats into a bowl (measure by eye) and add as much milk as you like depending on the preference of thickness. Add vanilla essence and microwave for 2 minutes. When finished, stir and microwave again for 1 minute.
- Add the eggs to the pan and stir. Once they begin to solidify, season with salt and pepper. Judge their cooking by eye; they should be a little moist when you take them out because they’ll continue to cook a bit afterwards.
- Add a spoon or two of peanut butter to your oats and sprinkle on a handful of blueberries. Prepare your protein shake and enjoy.
I have this every morning and I still haven’t bored of it.
